Description
1931 third edition is a blend of casks containing distillates from three pot stills and a Coffey still. The casks selected were judged to contain our finest rums and ranged from Coffey still rums aged 6 and 11 years, John Dore pot still aged 14 and15 years, a John Dore/Vendome blend aged 10 years, Coffey still rum aged in Port cask for 7 years, and John Dore aged in Port cask for 7 years. The blend was assembled and then placed back into American white oak casks for a period of three months for a final marriage , after which it is only lightly filtered to preserve its integrity, before being bottled. In 1931 a new distillery was commissioned in the Mabouya Valley near Dennery in St. Lucia. Rum was produced on this site until 1972 when St. Lucia Distillers was formed out of the merging of the Dennery Distillery and the Roseau Distillery. 1931 celebrates this history and St. Lucia Distiller’s commitment to world class, handmade rums, and each year a new edition is created. The second edition won the Rum Trophy at the International Spirits Challenge 2014.
