Colour : Pale yellow and clear. Nose : Sour apple, hawthorn and white flowers. Mouth : Fresh and well-balanced. The grapes are pressed as soon as they arrive in the cellars. The must is cold racked for 24 hours. Running water regulates the fermentation temperatures. The wine is ages in vats, without malo-lactic fermentation.It is bottled at the end of the winter, depending on the harvest. Grenache Blanc, Clairette and Bourboulenc.
