The vineyards can be found in the upper part of the Aude Valley approaching the Pyrenean foothills which have cooler climate because of the elevation and grapes ripen later.

According to the contemporary historian – Emmanuel Leroy-Ladurie, Pinot Noir was one of the main varieties mainly planted in the 15th century and used to make high quality wines.

This selection of wine from Pinot Noir has a deep ruby color expressing fresh fruit aromas such as Morello cherries.

The fresh and fruity flavors with silky tannins and length make the wine more structured and balanced as well.

Tasting the wine at 13-14 °C is best especially when paired with beef, veal, game dishes and poultry.
